Bannockburn in Central Otago is renowned for its ability to produce small quantities of premium wines. Domain Road's Defiance Vineyard, on Felton Road, is tucked into a sheltered valley where miners once hunted for gold.
The fruit was hand harvested on 8th and 9th March 2018 and whole bunch pressed before cold settling for 2 days. The resulting juice was then racked off into a stainless steel tank and older oak barrels (14%) before inoculating with selected wine yeasts to undergo fermentation. The tank fermentation was stopped to retain some residual sugar. The two portions were then combined before bottling to make a single wine.
Our Pinot Gris has aromas of peach blossom, marzipan and toffee apples on the nose, mingled with hints of ripe lemon and biscotti. On the palate it provides flavours of juicy stone fruit, ripe pear, peach and a hint of rockmelon. The wine is has a creamy texture, it has balanced acidity with good levels of complexity and concentration followed by a long lingering finish.
Enjoy with Asian cuisine, seafood, white meats or salad dishes.
