The Wine
Our Paradise Pinot Noir is a reserve wine made to reflect the best of the vintage. Only 900 bottles are produced from Barrel selections which are carefully aged before release.
The grapes for our 2015 Paradise were hand harvested on 9th April 2015, and were de-stemmed into an open top fermenter and left to cold soak before fermenting. After fermentation the wine was aged in French oak barriques for 10 months before the Paradise portion of this wine was selected and put aside for a further 3 months to age before being finished and bottled. The wine was bottle-aged for a further 30 months before release.
The 2015 vintage is dark purple with purple hues. The wine has a fragrant nose with vanilla, spice, rich dark fruit and mushroom. Black plum, violets, tobacco, chocolate and spice show on the palate. A concentrated mouth filling wine with smooth, integrated finely grained tannins.
Food match: rabbit, duck, lamb, or sip and contemplate by itself.
