The Wine

Our Paradise Pinot Noir is a reserve wine made to reflect the best of the vintage. Only 900 bottles are produced from Barrel selections which are carefully aged before release.

The grapes for our 2012 Paradise were hand harvested on 13th and 21st April, and were de-stemmed into two open top fermenters and left to cold soak before fermenting.  After fermentation the wine was aged in French Oak barriques for 10 months. The Paradise wine was chosen and blended at this stage and returned to barrel to mature for a further 4 months. The wine is aged for a further 3 years in bottle before release.

The 2012 vintage is medium purple with purple hues.  The wine has a perfumed nose with dark fruit, mocha and spice.  Rich, sweet dark fruit on the palate with some leather, tobacco and cedar. A medium bodied wine with ample, supple, velvety tannin and good persistence on the finish.

Food match: rabbit, duck, lamb, or sip and contemplate by itself.
