The Wine
Our Defiance Pinot Noir is a limited release, single vineyard wine made from grapes grown on our Defiance vineyard on Felton Road. The wine is selected from 4 different clones grown over 2 blocks on the vineyard.
The grapes for our 2017 Defiance were hand harvested between the 30th March and 4th April 2017, and were predominantly de-stemmed with 10% whole bunch fermented. After initial fermentation the wine was pressed off into French oak barriques (29% new) for malolactic fermentation and ageing for 10 months.
The 2017 vintage is very dark purple with purple hues. The wine has fragrant notes of violet, potpourri, red cherry, raspberry and black pepper on the nose. the palate is black and broody with ripe fruits, earthy notes, tobacco, violets and spice. A complex wine with nice acidity and ample fine grain tannins, with a long persistent finish.
Food match: rabbit, duck, lamb, or sip and contemplate by itself.
