The Wine
Our Defiance Pinot Noir is a limited release, single vineyard wine made from grapes grown on our Defiance vineyard on Felton Road. The wine is selected from up to 5 different clones grown over 2 blocks on the vineyard.
The grapes for our 2016 Defiance were hand harvested between the 29th March and 13th April 2016, and were predominantly de-stemmed (15% were left as whole bunch) into open top fermenters and left to cold soak before fermenting. After fermentation the wine was aged in French Oak barriques for 10 months.
The 2016 vintage is dark purple with purple hues. The wine has a perfumed nose with fragrant violet, chocolate, tobacco and spice. Rich, sweet bright fruit on the palate with some cherry, clove, coffee and chocolate flavours. A weighty wine with ample, fine tannin and good persistence and minerality on the finish.
Food match: rabbit, duck, lamb, or sip and contemplate by itself.
