Our Chardonnay grows in three blocks on our Defiance vineyard chosen for the quality of soils and underlying gravels. 

The grapes were hand harvested between the 28th and 30th March 2015.  All the grapes were whole bunch pressed to tank before being transferred to French Oak Barriques for fermentation to dryness.  Aged in the oak barriques for 10 months this Chardonnay underwent malolactic fermentation and was regularly lees stirred.

Our Chardonnay is dry in style, and pale straw with clear hues in colour.  The nose has fragrant aromas of stone fruit, pear and pineapple with hints of vanilla.  The palate is dry with ripe peach, nectarine and pear together with citrus and spicy oak.  The texture is creamy and mouth filling.  A complex wine with balanced acidity, nice minerality and a long finish.
