Our
Sauvignon Blanc vines are planted partially on the top of Templers
Hill, an area left untouched by 19th century gold miners, and partially
on Doctors Flat where mining has exposed mineral-rich clays from a
2-million year old lake bed.
The Wine
Our 2008 vintage displays typical Sauvignon Blanc aromas of gooseberries, cut grass and bell peppers with citrus undertones. Approximately 12.5% of our 2008 Sauvignon Blanc was fermented in old oak barriques to add another layer of complexity to the wine. A hint of residual sugar balances the wine’s natural acidity.
